Mexican Lentil Taco

Tacos are awesome. Kids love filling up their tacos. The sauces are healthy and nutritious. Tacos are great at parties, too. Try to make some, tonight!


2 tsp grape seeds
1 onion
2 garlic cloves
5 cups cooked brown lentils
3 tbsp tomato paste
2 tbsp spicy chili sauce (to taste)
1 tsp ground cumin
½ tsp ground coriander
½ tsp dried oregano
½ tsbp salt (to taste)


Chop onion and garlic.
Mix spices in a small bowl: chili sauce, ground cumin, ground coriander, dried oregano and salt.
Heat oil in a nonstick pan over high heat and sauté the onion for 2 minutes; add the garlic and cook for another minute; add spices, stir.
Decrease heat to medium, add the lentils and a tablespoon of water. If the mixture is still dry, add another tablespoon of water.
Add the tomato paste and stir vigorously for 5 minutes, mashing the lentils with a wooden spoon. Add another tablespoon of water, if necessary.
Serve on a tortilla with lettuce and guacamole. If you’re curious, our recipe for guacamole couldn’t be easier: Mix avocado, tomato, chopped green onion, chopped red onion, chopped coriander, a teaspoon of olive oil, salt and pepper to taste, and a touch of spicy chili sauce.
