Lunch is always an issue when you are a busy vegan woman. Especially when you have 3 small kids that need your full attention in the mornings, carpooling services in the afternoons, and of course… keep you up at nights.
This means that I can hardly find the time to cook and try new recipes, not to mention find the time to soak beans and other whole grains. And this also means that by the time I send everyone to school and kindergarten, I just drive straight to work with no lunch.
Luckily, I found a new and really fabulous salad place right next to where I work that makes awesome and super healthy vegan salads. When I eat their salads I feel as if I finally have a healthy ‘Me Time’ which is priceless. Also, since it’s a really popular salad bar, it also allows me to go there and eat with my non-vegan friends without being treated or labelled as the problematic eater.
After trying many salads, this quinoa salad has been pronounced the ultimate winner. It’s super healthy, fresh and also keeps me levelled up until dinner time.
The salad has quinoa, black lentils, wheat, buckwheat, mung bean, sweet potato, cranberries, walnuts, tomatoes, red onions, tofu, coriander, mint, basil, spring onions, tahini, and sesame, and is seasoned with olive oil and lemon juice.
I promise that as I soon as I find the time to cook, I will try to replicate this healthy yummy vegan meal.
