VEGAN Oreo and Caramel Brownies [Recipe & Video]

As if Oreoes and chocolate aren’t decadent enough, we decided to add some scrumptious Lotus Caramel Spread and Cookies to the mix!

Now this is the true meaning of a drool-worthy vegan dessert!

 Vegan Oreo and Caramel Brownies Recipe

Ingredients:

16-20 Oreo cookies + a few cookies for decoration
1 3/4 cups soy milk
3/4 cup coconut oil
Lotus Biscoff biscuits
2 cups flour
1/2 cup unsweetened cocoa powder
1 tbsp. baking powder
Pinch of salt
1/2 cup brown sugar
1/2 cup canola oil
1 tsp. vanilla extract
3.5 oz. vegan chocolate (100 grams)
1 cup Lotus Biscoff biscuit spread

Preparation:

In a food processor, combine the Oreo cookies with 1/4 cup soy milk and 1/4 cup coconut oil. Blend well, until the mixture reaches a smooth texture. Spread the mixture evenly in a cake tray lined with parchment paper. Add a layer of Lotus Biscoff biscuits on top. Refrigerate.
 
 In a large bowl, mix 2 cups flour, 1/2 cup unsweetened cocoa powder, 1 tbsp. baking powder, a pinch of salt, 1/2 cup brown sugar, 1/2 cup canola oil, 1 tsp. vanilla extract, 1 cup soy milk and 1/2 cup coconut oil. Pour evenly over the first Oreo layer. Add big chunks of vegan chocolate on top. Bake in a preheated oven at 256f/180c for 20-25 minutes.
 
 In a small bowl, mix 1 cup Lotus Biscoff biscuit spread, 1/2 cup soy milk and 1/4 cup coconut oil. Heat in the microwave for 1 minute and mix well until well-combined. Pour the mixture over the cake and decorate with crushed Oreoes.
Refrigerate for at least 4 hours before serving.
