What do I like about this season? Just about everything. From the beautiful autumn leaves and their glorious colors, to the shapes, colors and flavours of autumn vegetables. I also love this season’s holidays. But most of all, I love the smell of a freshly baked pumpkin pie.
Bringing together the most celebrated autumn vegetable (pumpkin) and the most celebrated holiday of the month (Thanksgiving), here is my vegan Thanksgiving Pumpkin Spice Pie. I’m pretty sure you’ll like it too! Just follow the recipe below and let the beautiful scent of autumn fill your home.

Vegan Thanksgiving Pumpkin Spice Pie
For the crust:
2 cups flour
1/2 tsp salt
2 tbs brown sugar
1 tsp vanilla extract
1/2 cup Nature’s Way Organic Coconut Oil
1/3-1/2 cup water
For the filling:
2 cans Farmers Market Organic Pumpkin Puree
1 can Let’s Do… Organic Condensed Sweetened Coconut Milk
1/2 cup brown sugar
3 tbs cornstarch
1 tbs Simply Organic Pumpkin Spice
1 tsp vanilla extract
1/4 tsp salt
1/3 cup soy milk
For the whipped cream (for 3-4 servings):
1 cup cold coconut milk
3 oz. instant vanilla pudding mix

Add recipe ingredients to your cart:
Nature’s Way Organic Extra Virgin Coconut Oil (16 oz.)

Step 1: Whip the coconut milk with the vanilla pudding mix for a thick and heavy whipped cream. Keep refrigerated.
Step 2: Combine all the crust ingredients (except the water) in a food processor. Blend well and add the water gradually until you get a smooth and soft dough. Place the dough on a clean surface and roll it into a thin sheet. Place it into a baking tin and remove any excess dough.
Step 3: In a large bowl, combine all the filling ingredients. Pour the mixture into the crust. Decorate with Pumpkin Spice almonds.
Step 4: Bake in a preheated oven (350F) for 50 minutes. Make sure to chill the pie completely before removing it from the tin or slicing it.
Step 5: When serving, decorate with coconut whipped cream and a cinnamon stick.
